SPAGHETTI AGLIO e OLIO (Garlic & Oil):
1 lb Spaghetti ¾ cup Extra Virgin Olive Oil 10-12 cloves Garlic, sliced ½ cup Fresh Parsley, chopped 1 tsp Crushed Red Pepper Flakes, or to taste 1 tsp Black Pepper, or to taste 3/4 cup Pasta Water, approximately ½ cup Grated Pecorino Romano, or to taste Salt to taste
Steps:
- Add oil to the pot and then add the cut garlic. Gently increase the heat.
- Fry garlic in oil - do not burn.
- Add red pepper flakes. Continue to cook. Do not burn.
- Add 3/4 cups of pasta water to the garlic and oil.
- Add parsley
- Turn off the heat.
- Drain pasta and return it back to the pot.
- Dump the garlicky oil in the pot.
- Mix well with fork.
- Transfer to platter. Mix well again.
- Add black pepper and salt to taste.
